Beyti Kebab
It looks like a tomato sauced sushi... of course it is a cooked one. Beyti kebab is one of the most famous Turkish dish consisting of ground beef or ground lamb that is grilled on a skewer and served wrapped in special bread, sliced like sushi and topped with tomato sauce and yogurt on side.

Stuffed Eggplant or Karniyarik (in Turkish)
Ingredients :
- Eggplants ( 6-7 inches long) about 2 1/2 – 3 lb.)
- 1/2 cup of olive oil or vegetable oil
- 3 small green peppers of frying peppers
- 3 tablespoons of olive oil (instead of butter)
- 1 medium onion – grated 3/4 cup
- 4 garlic cloves, minced
- 1 tablespoon of tomato paste
- 4 medium tomatoes – 2 peeled & chopped – 2 cut into quarters
- 1.5 pound ground lean lamb or beef
- 1/2 cup of finely chopped fresh parsley
- 1 cup of lamb stock – water is fine
- salt & pepper as per your taste

Baklava... Turkish Dessert...
It has been claimed by many ethnic groups, but there is strong evidence that it is of Central Asian Turkic origin, with its current form being developed in the imperial kitchens of the Topkapi Palace. (from wikipeia.com) It is the most famous dessert in Turkish Cuisine. Locally Gaziantep is very famous with their special Baklava's. Baklava is prepared on large trays and cut into a variety of shapes.
